Birrieria El Compadre was born from a love of traditional Mexican birria — the kind that takes hours to make and seconds to finish. We set up shop on E Broadway St in Pearland, TX with one mission: to bring authentic, slow-cooked birria to Houston's south side.
Every batch of birria starts with whole dried chiles — guajillo, ancho, and pasilla — toasted and rehydrated, blended with garlic, cumin, cloves, and fresh herbs. The beef goes in low and slow, absorbing every bit of that rich, complex flavor until it's tender enough to fall apart with a fork.
The result is the consommé — that deep red broth that makes your eyes light up when you see it. We pour it over everything, and yes, you should be dipping your tacos.
